Abstract Thailand is persistently challenged by managing grease waste from food courts andsmall food vendors. Although grease traps are widely used and regulated, a lack of systematicdisposal strategy limits sanitation safety and resource recovery. This study examined theproduction of fuel briquettes from food court grease and food waste. Chemical propertieswere determined following American Society for Testing and Materials standards. Eachbriquette formulation was tested in two replicates, with results descriptively interpreted. Allbriquette formulations complied with Thai community product standards, boosting potentialenvironmental sustainability and economic feasibility. The optimal non-chemical formulation(5:3:2:2 for grease waste, food waste, sawdust, and starch binder) achieved a 28.81 MJ/kgheating value; 0.31-minute ignition delay; 13.08-minute burn time; and 0.01% ash contentwith a 1.70-year payback period. By comparison, the leading chemical-additive formulation(5:1:4:2 with sodium hydroxide (NaOH)) reached 28.79 MJ/kg but showed inferior combustionquality, with a shorter burn time of 4.41 minutes, a higher ash content of 0.02%, and a longerpayback period of 2.88 years. Sensitivity analysis indicated that economic feasibility was mostinfluenced by the electric muffle furnace cost and electricity expenses. These findings supportnon-chemical briquettes as a suitable option for small-scale urban food waste recycling.
